Old School Beef
Old School Beef is built on honesty, humour and learning by doing. Jess and Dale came to farming later in life with no previous experience, but with deep conviction. They focus on soil health, cattle wellbeing and direct relationships with customers from the Coffs Coast to the Gold Coast. They believe in complete transparency and have an open farm policy to anyone who would like to come and visit and see how our beef is made nor our cattle are raised.
At 43, Dale “accidentally” read a book on regenerative agriculture, and everything shifted. Five obsessive years later, he and Jess had land, debt, cattle and a new direction. Known affectionately as Rabbits and Whale, the pair started Old School Beef with no farming background, but a clear purpose: to leave their patch of soil healthier than they found it.
Their bulk beef boxes are direct from the farm, feeding families from the Coffs Coast to the Gold Coast. For Dale, this work is also deeply connected to the belief that food is medicine — especially when it comes from healthy soils, well-managed animals and regenerative farming systems. Nutrient-dense, delicious beef may be the product, but the bigger story is land recovery, cattle wellbeing and the joy of doing hard things with purpose.

Two first-time farmers with no idea what they were getting themselves into, a deep love of soil, some very well-fed cattle and a suspicious amount of joy for people carrying that much debt.
